Ah, the baby of the family...Sweet Potato was the last recipe created in our Granola line. She came about after many requests for a Vegan flavor. While I was at it, I decided to make it "wheat free" as well. Time was spent figuring out a new base recipe, but by incorporating Muddy Pond Sorghum Syrup ( a molasses-type natural sweetener made from millet) and omitting Wheat germ, the rest was a piece of cake. Sweet Potato is one of the prettiest granolas, imho, because of the slightly darkened orange hue from the mashed and baked NC Sweet Potatoes, the garnet color of the dried cranberries, and the olive green of the Pepitas (pumpkin seeds). Lots of top-secret spices and whole pecans make this a southern favorite.
